DL-Acetolactic Acid can be converted by zeolites (as catalysts) into Acetoin; a compound that is used in food flavoring and fragrances and is also found in some fruits and vegetables. DL-Acetolactic Acid can also spontaneously decompose into Diacetyl and Formic Acid in fermentation solutions within the range pH 5-6.
